This long-aged cava, with more than 15 years in our underground cellars, has been created in an exceptional vintage and represents the culmination of a unique project: the first cava bottled by the three Jovani brothers. As a finishing touch, it includes a small 0.2-carat diamond on the cap, an idea of ​​your father Robert Jovani, which we have materialized as a tribute to his legacy. This cava develops an extraordinary complexity, with notes of toasted butter, dried fruit and subtle mineral hints that evoke the sea breeze. TASTING NOTE

Bright golden in colour, with fine and persistent bubbles. On the nose, it is extremely complex, with aromas of toasted butter, dried fruit, honey and lemon caramel and a mineral touch evoking the sea breeze. On the palate, it presents an exceptional creaminess, balanced by a vibrant and fresh acidity, which gives rise to a long, persistent finish full of saline and citrus nuances.

VINEYARDS

Only traditional varieties have been used: Macabeo, Xarel·lo and Parellada from their own vineyards, grown organically. Each variety is vinified separately and we blend according to the vintage for the second fermentation in the bottle using the traditional method. Bottle aging for more than 40 months in the underground cellar.
